That's a pretty nice W350
Rotating the stock fuel pin to its deepest position won't increase the EGT's too much. As off the EGT's, having the probe in the exhaust manifold is the best place for it, just remember to not drill in the center, as there is a divider there. Getting the truck warmer may be just as simple as blocking part of the radiator off, I have to do it every winter with mine, otherwise it runs way too cool. There is loads of good information on this forum, the search function kinda lacks, but it works. Best results are using the "google custom search" function at he top of the page.
