The pigtal that plugs into the sending unit can be a bit loose internally, resulting in an erratic signal. Since you mentioned that the oil pressure light also came on, I'd still double check with a mechanical gauge. You can install one temporarily on top of the oil filter housing. There is a 1/8" NPT port with a plug in it that makes a great place for a temporary gauge.
