12-13mpg just straight irritates me to the point of not dealing with it though.

Yeah it's straight bs why they get such crap mileage. After seeing what they run for tuning though it sense why it's so rubbish from factory. I ran the stock values through my timing calculator once and there's not enough timing anywhere on it (we like to see 48-52% btdc ideally, and it ranged from 0-46%) it made sense after that why dpf's plug up so often

Eventually I'll have to get a newer truck...what's best about the 2010?

If it's a manual it has the least torque management. There are many people with 12's that flash to 2010 files to get around the torque management

So, realistically, what can/will a 2010 with a manual get for economy after I'm done with it?

Depends what done means. Mine dd'ing with the 80 was mid 17's with a high of 19.6. The 467 seems to be doing worse as the last tank was 16.1, and the highest I've gotten was 18.2 (flogging on the 80 on the way to lethbridge with another diesel enthusiast netted 16.6) with the stock turbo and big tunes I was getting the same as when it was stock

Nooooope. I would consider it if it was four wheel drive though. The wife is already spoiled, she has an 2008 Escalade to drive right now...
